Traditional Mexican Rice Recipes
There are many recipes of Mexican rice and they range from the basic
recipes to the much elaborated ones.
In other words Mexican rice can be, at the same time, very quick and easy
to prepare but it can also be somewhat difficult and time consuming.
In this article we decided to share one very original and traditional
Mexican recipe that is relatively easy, not so quick to prepare but very
tasteful and unique.
Ingredients
- 1 cups brown rice
- 3 tomatoes, peeled and chopped
- 1 small onion chopped
- 1 clove garlic finely chopped
- 8 table spoons of chicken fat or vegetable oil
- 1 cup of chicken meat
- 2 medium sized carrots
- 1 teaspoon of chili powder
- Pepper and salt to taste
- 1/2 cup shredded lettuce
Directions
- Cook the chicken meat
- Pour 3 cups of water in a large bowl and bring water to a boil
- Add rice slowly while stirring
- After 10 minutes reduce the heat, cover and simmer for 20 minutes
- Drain rice in cold water 3 times while shaking it.
- Combine cooked chicken, tomatoes, onion, carrots and garlic in a blender
and blend until smooth.
- In a souse pan heat the oil, add the rice and cook it for 10 minutes while
stirring.
- Add the blended mixture and cook for another 15 minutes while scraping the
bottom of the pen to stop the mixture from sticking.
- Stir in the salt, lettuce, pepper and chili powder
- Cover the top and remove the pan from the heat.
You may be surprised to see the chicken meat as an ingredient in this
Mexican rice recipe. The reason for this is that while traveling thought the
rural and remote parts of Mexico we came across Mexican indigenous people that
prepare their food in very unique way.
Their way of food preparation is not the topic of this article but we can
say that this rice recipe represents the mixture of traditional, rural, and
modern Mexican cuisine.

Quick and Basic Mexican Rice Recipe
Ingredients
- 1 cup of rice
- 2 cups of water
- 1 can of diced tomatoes
- 1 can of kidney beans
- 2 tablespoons of olive oil
Directions
In a sauce pan bring 2 cups of water to a boil. Then add rice and stir
for 20 minutes. Stir in diced tomatoes, kidney beans and olive
oil and cook for five more minutes.
